Christmas isn't Christmas without old-fashioned homemade Christmas cake. The ideal Christmas gift for family, friends and clients. Or perhaps... simply self-indulgence.
Once again, the Medbury Parents' Association are running a Christmas Cake Fundraiser, selling delicious, locally made by the Pōhutukawa Pantry, round or square Christmas Fruit Cakes.
A much loved family recipe, the Pōhutukawa Christmas Cake is bursting with fruit. Carefully selected sun dried apricots, raisins, sultanas, cherries and tangy citrus, are soaked in Kaiapoi Distillery’s exceptional quality crafted brandy, warmed by the Canterbury sun and turned regularly over three days making the fruit plump and juicy while developing the flavours and heavenly aromas. Fresh free range local eggs and locally sourced flour mixed with the finest festive spices help to bind the mixture. The cake is topped with nuts, cherries and ginger and once baked, is brushed with brandy and glazed with homemade Otago apricot jam. Each cake is then individually wrapped and regularly brushed with brandy during the four month maturation process. Cakes will arrive in both square and circular shapes. Your choice of shape will be on a 'first in first served' basis. Weight is 2kgs.

Cakes are presented in a red gift box and will be be available to collect from The Medbury Centre Kitchen between Monday, 26 November to Friday, 30 November, 2.45pm to 3.40pm.
